La Petite Maison's Bikini – A Recipe

WHere is a home-style version of a drink from the seasonal menu. Designed as a party-sized prepared mix which is loaded with flavours of the holiday season, making it perfect for a festive gathering. Save the extra syrup to use in morning drinks, sweets, or to make additional servings of the drink.

The Bikini Cocktail

Yields 10 servings

For the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar

For the Drink (yields 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, for finishing

Method

Making the Citrus Syrup: Place the listed ingredients in a pot, heat until it reaches a light boil, stirring until the sugar dissolves. Then, take off the burner and leave to reach room temperature completely. Transfer into an sealable bottle, close it and refrigerate it chilled, it can be stored for up to four weeks.

To make Cocktail Base: Combine the specified liquids in a sizeable container, allow it to infuse for one hour, then pass it through best through muslin, so it's perfectly clear.

For serving: Add 85ml of your batch mix into a mixing glass filled with ice, and stir carefully for a minute to cool it down. Filter into a cold coupe glass or a similar vessel, top with a few cranberries and complete it by giving it a brief mist of the essential oil above the glass.
